Greek Rice
Ingredients:
2 cups of white rice
4 cups of hot water
2 tablespoons of oil or olive oil
1 small onion (chopped)
2 cloves of garlic (chopped)
1 medium carrot (cut into small cubes)
1/2 red bell pepper (cut into small cubes)
1/2 green bell pepper (cut into small cubes)
1/2 cup of peas (fresh or frozen)
1/2 cup of sweet corn
Salt to taste
Parsley or chives (chopped, for garnish)
Preparation:
Sauté the Ingredients:
In a pan, heat the oil or olive oil and sauté the onion and garlic until lightly golden.
Add the carrot and cook for 2-3 minutes.
Add the Rice and Peppers:
Add the uncooked rice and mix well with the vegetables. Sauté for 1-2 minutes.
Add the diced peppers and stir.
Cooking the Rice:
Add the hot water and salt to taste. Mix well.
Reduce the heat to medium and cook until the water begins to evaporate.
Add the Peas and Corn:
When the rice is almost ready (the water has almost evaporated), add the peas and corn. Stir gently.
Finish:
Cover the pan and cook over low heat until the rice is completely dry and soft.
Turn off the heat and let it rest for 5 minutes.
Garnish and Serve:
Fluff the rice with a fork and garnish with chopped parsley or chives.
